Mexican S’mores, a new camping tradition…

Mexican S’mores, a new camping tradition…

Last summer, some family friends shared with us a special treat that has now become one of our favorite ever desserts!  We reserve it to ‘camping’, and don’t do it very often so that it stays ‘special’. We had never heard of Mexican S’mores before!   They are a slight twist on regular s’mores; I don’t care for s’mores generally… I like a few marshmallows roasted golden brown with the insides all mushy, but I don’t like traditional s’mores.     For Mexican S’mores, you need the typical s’more’s chocolate and marshmallows, but instead of graham crackers, you’ll want to have tortillas, butter (we only use the real thing – have you ever read about margarine???? :p), and aluminum foil. . Mexican S’mores are super easy to make, and a favorite of all ages!     Spread softened butter thinly on one side of each tortilla, then place marshmallows and chocolate (we usually... [Read more...]

Victoria Day Week-end in Ontario

If you are wondering what to do in May and you are near the border of Ontario, why not come and visit us on the Victoria Day long week-end? Victoria Day is a federal Canadian public holiday which is celebrated on the last Monday before the official birthday of Queen Victoria.    The holiday has been observes since before Canada was formed and originally on the sovereign’s actual birthday.    This year, the holiday is on May 20th which means that May 18-20 is our long week-end. But who is Queen Victoria? Queen Victoria – born Alexandrina Victoria on May 24th, 1819, was the monarch of the United Kingdom from June 20th, 1837 until her death on January 22nd, 1901.   Her reign lasted 63 years and seven month which is the long of any other British monarch and the longest of any female monarch in history.    The first official legislation passed in the parliament of the Province of Canada was to officially recognize May 24 as the Queen’s birthday.   Following her death in 1901,... [Read more...]

It’s Finally Here – Time to De-Winterize!

It’s Finally Here – Time to De-Winterize!

For those of us who live in the Northeast, it’s been a pretty long winter and it’s finally here – that glorious time of the year when we break out the buckets, clean the cobwebs and open the camper for the season! So since your camper was winterized before the snow started to fly, it stands to reason that once you’re ready to take it out in the spring you’ll need to de-winterize. It’s really pretty simple – you just winterize in reverse. The first step is to check your hot water heater. The plug should be out, so the first step to de-winterizing is to replace the hot water heater plug. Something else you’ll want to check for is Spiders. Spiders LOVE to hang out near the hot water heater over the winter. They build their little spider nests and make quite a mess. If you grab a can of compressed air that should sufficiently eradicate the creepy crawlers. Next step is to un-bypass the hot water heater. Turn the valve so water can run into the system... [Read more...]

Tow Ratings Standardization: Now You Will Never Know

Tow Ratings Standardization: Now You Will Never Know

Automakers often brag about the towing abilities of their pickups, encouraging shoppers to believe that their vehicles could safely pull almost anything. The towing claims are effective, moving heavy metal in the single most profitable product segment in the auto industry. They are also dubious. In an August 2011 post, I wrote: Have you ever wondered if 10,000 pounds of towing capacity means the same for trucks manufactured by GM, Ford, and Dodge? You will soon know the truth, the whole truth, and nothing but the truth. One and a half years later, all but one pickup manufacturer refuses to follow standardized towing-capacity tests they all agreed four years ago to adopt for 2013 models—test procedures that would lower the towing capacity ratings they now claim, reports Autonews.com. Instead, automakers follow their own test regimens and advertise claims that could encourage customers to push their vehicles beyond safe limits in terms of stopping and control. The years-long industry effort... [Read more...]

A Beautiful Spring Hike

Tent campers in the Ski Valley parking lot RVers looking for a place to go in early spring should think about northern New Mexico. There is much going on and, if you are enjoying the amenities of the Taos Ski Valley, you may camp or park your RV in the large upper parking lot of the resort. In fact, the day we took this hike, there was a group of tent campers settled in the parking lot. Further, there are events for all ages, from spring skiing for the more adventurous to snowshoeing and hiking for those more inclined to the quieter pursuits. Presented with a recent sunny spring weekend with temperatures expected to reach the high 50’s Terry and I headed up to the Taos Ski Valley to hike one of the many trails in the area. Though they were still snow-covered with a base in excess of 50 inches, were able to hike without snowshoes as they were hard packed and well established. As we headed out in our winter hiking attire, we were soon too warm on the sunny but snow-covered trails. We removed... [Read more...]
